and began ground working her for the last 4 months.  A very well established relationship is now formed and I have moved to back work.  Being off the track, she tends to bite the bit for balance.

A few questions...

What is the best bit for an off the track horse with a VERY soft mouth when not biting down...
How can I teach her to collect herself...

For collection I try and do a lot of stopping and backing to teach her to keep her butt under her, but at a trot she seems to forget.  Short of getting into her mouth a little are there other secrets???  We have not progressed beyond a trot and will not until this issue is handleded!  As you can tell, we are quite far from barrels right now, but we have all winter!
